Method

    Heat the oil in a pan or frying pan over a low heat and fry the onion until softened but not golden, around 8-10 mins. Stir in the garlic and oregano and cook for a further 1-2 mins until fragrant, then tip in the tomatoes and season. Cook gently for 10 mins until the onion is tender. Season further if necessary. Serve with cooked pasta.
