Method

  • step 1

    Mix together the mayonnaise and ketchup, adjusting the ketchup to suit your taste. Season with hot sauce, Worcestershire sauce and lemon juice to taste. Cover and chill, dusting with a little cayenne just before serving.

Recipe tips

To make a prawn cocktail, use 160g cooked prawns, 2 shredded Little Gems, then drizzle over the marie rose sauce and scatter with chopped chives. (The sauce recipe above can easily be halved to make six prawn cocktails.)
If you like, add a small splash of brandy or dry sherry to the sauce.

I have always made it from an old Mrs. Beeton recipe which leaves out the hot sauce but includes finely chopped onion and celery.

Very authentic and very easy. I did up the hotsauce to one tsb as I did with the Worcester. I'm not a heat fiend but it worked for me.
