Easy caponata
Caponata is a chunky aubergine sauce that is great for dipping bread sticks into or spreading on toast
- 250ml lemon juice
- 250ml Disaronno
- 2 handfuls ice
- 750ml chilled soda water

Method
step 1
Mix the lemon juice and Disaronno in a jug and chill until ready to serve.
step 2
To serve, add 2 handfuls ice and the chilled soda water.

Delicious drink went down very well on new year's eve. I found it a little bland at first so added more amaretto and lemon juice. PBL lemon juice/cordial was a great easy way of getting fresh lemon juice without the faff!

For a shorter amaretto sour with a touch of class, shake the following ingredients over ice and strain into a chilled martini glass. 1.5 floz amaretto, 1 floz lemon juice and 0.5 floz simple syrup.
