Loaded hot dogs with apple slaw

- 100g mayonnaise
- 2tbsp wholegrain mustard
- 200g white cabbagefinely sliced
- 100g carrotscoarsely grated
- 4 red-skinned apples
- 1tbsp vegetable oil
- 2 red onionsfinely sliced
- 2tbsp light brown sugar
- 1tbsp cider vinegar
- 6 Bockwurst or pork sausage

Method
step 1
Stir the mayonnaise and mustard together in a large mixing bowl and season. Stir in the cabbage and carrot. Grate in 2 of the apples (discarding the core). Mix well.

Heat the oil in a frying pan and fry the red onions on a medium heat for 5 mins with a pinch of salt. Core and slice the other 2 apples into thin wedges. Add these to the pan with the brown sugar and cider vinegar and cook for 10 mins, stirring occasionally, until sticky and caramelised.

Cook the Bockwurst or sausages following pack instructions. Split the hot dog rolls and toast. Spoon a little apple slaw into each roll, followed by a sausage, then top with the caramelised apples and onions to serve. Any leftover slaw will keep for 3 days in the fridge.
