Method

  • step 1

    Toss the chicken with the lime zest and juice, pepper, oil and a little salt. Cook on a griddle pan or barbecue for 6-8 mins, turning until evenly cooked and nicely browned.

  • step 2

    Heat the tortillas in the microwave, following pack instructions. Spread a little guacamole over each tortilla, top with some lettuce and chicken, then drizzle over the yogurt. Roll up and enjoy.

This was lovely. I was worried that it would be bland (as some of the comments suggest) so I added fresh chilies, peppers and paprika.

I marinade the chicken with the lime and black pepper, for between 20mins to 1 hr. It's only on re-reading that I realized this wasn't specified, but the marinating really does bring out the flavours.

i love this recipe! super quick and easy and very tasty! a good one to make for guests too. we sometimes use sweet chilly sauce instead of guacamole - that's also very good.
