Method

  • step 1

    Shred the lettuce and mix with some chopped cucumber, a pinch chopped fresh mint and the lemon juice. Drain and flake the tuna, stir into the salad. Season if you want to. Slit open the pitta-breads and warm briefly in a toaster. Stuff pitta pockets with the salad and tuna mix.

I followed this just as it was - yummy but quite dry. Added salad cream to help it out!

Used the pita as a open sandwich/pizza type of thing so I could fit more topping on it, spread laughing cow at the base, used spinach and basil…

Really quick, easy and tasty lunch. I used tortilla wraps instead of pitta and added a smidge of mayo before the filling, but otherwise stuck to the recipe. Tasted very fresh.

I've added chopped green olives and finely chopped spring onions. I also added the cucumber (without the seeds) coarsely ground and squeezed (in order to remove its juice). A bit of olive oil brings everything together. Fantastic dish :)
