Method

  • step 1

    Heat the oil in a pan, add the onion and cook for 10-15 mins until soft. Add the garlic for the final min, then stir in the beans to heat through. Add the lemon zest and juice. Stir in the parsley to serve.

Flavoursome and easy to prepare.

Initially, I prepared the dish as is and found it a bit bland. This changed with added sea salt, freshly ground black pepper and additional ‘soaking time’ (approx 30 mins).

I tripled the recipe to serve 15 people as part of a buffet. None left but definitely needs a good amount of seasoning

I made this to serve alongside some salmon and the lemony flavours worked really well. I was a bit concerned that my husband wouldn't be keen as he's not a fan of parsley but it went down very well.

I've made this several times. It is so quick and easy. Makes a delicious side dish. Is best with a good amount of parsley, and I add a little extra lemon to taste and of course - seasoning is a must!!
