Pour the espresso or strong coffee and milk into a blender. Add 2 scoops of ice cream and the ice cubes, then blitz until it is the consistency of a smoothie. Pour straight into a tall glass, top with the last scoop of ice cream and crumble over the brownie or cookie to finish.

RECIPE TIPS
NEW FLAVOURS OR LOW-FAT

For a lower-fat iced coffee sundae, use semi-skimmed or skimmed milk.

Experiment with flavours; for a mocha iced-coffee sundae, use 2-3 scoops of chocolate ice cream.

I would possibly add a few crushed chocolate cream biscuits (like Oreo) to it OR drizzle with some Dulce de Leche before serving. OMW! Cannot wait to try this out!

Oh indulgence! These are very refreshing when chilled, quick aswell. They're just as great without all the topping, and notably easier to drink :)
