Method

  • step 1

    Heat the oven to 180C/160C fan/gas 4. Cut the top off the garlic bulb, exposing the tops of the garlic cloves. Put on a small square of foil, and rub with the olive oil. Season with salt and pepper. Scrunch up the foil to seal in the bulb.

  • step 2

    Roast for 25-30 mins until soft when pressed, and the papery casing is light golden. Leave to cool for a few minutes before squeezing the soft roasted garlic out of their shells. Alternatively, take off all the papery casing and remove the cloves individually.

Stir roast garlic into pasta sauces, blend into soups like cauliflower or tomato, or use in cream sauces for chicken or pork. Roast garlic is great in dips, or even salad dressings, and works really well blended into hummus for added sweetness.

I have just done this to make some garlic mash which went down a storm. To get the garlic out of the shell I used the handle end of a teaspoon which made it very easy and no burnt fingers. I would also discard the browned end of the garlic as they can be a little bitter. Still if you love garlic…
