Method

  • step 1

    Heat oven to 200C/180C fan/gas 6. Toss the swede in olive oil in a shallow roasting tin, then season. Roast in the oven for 35-40 mins, tossing occasionally, until the swede is golden and soft.

  • step 2

    Stir in the honey and cumin seeds, and continue to roast for 10 mins until just starting to catch. Remove and stir through the chilli and coriander to serve.

Really great recipe. Swapped out the roast potatoes for this and tasted so good.

I added half a peeled/cubed butternut squash to my prepped swede & didn't have any runny honey, so used a drizzle of maple syrup instead, but it was delicious with the cumin seeds, plus fresh chilli & coriander at the end! Perfect, more interesting side dish - will definitely make again!

I made this today leaving out the honey (I have type 1 diabetes) and the chilli ( didn't have any) but it was still great. The roasting really brings out the flavour. A lovely way to eat swede!
