Method

  • step 1

    Heat grill to high. Lay the cheese on a baking tray in a single layer, then grill for 2 mins on each side until golden. Toss the watermelon, beans and mint together with the lemon juice and olive oil, season well, then layer on plates with the slices of halloumi.

  • step 2

    Drizzle with a little more oil if you like, and then serve with warm pittas.

This was really not nice at all. The ingredients didn’t go together well and the green beans were raw and super hard. Not for me

Wow! We served the beans warm and their heat gave the watermelon a beautiful flavour. A great salad.

added a little honey and dried mint to the dressing as no fresh mint, and some salt & pepper - and served halloumi and water melon with mixed salad. Lovely.

Unexpected.. The combination works nicely. Read some other comment and did the halloumi on griddle. Will make this again
