Lunchbox snacks
Keep hunger pangs at bay with these healthy, yummy lunchbox nibbles
- 3 slices wholegrain or rye toast
- 3 tbsp ready-made hummus
- 1 small avocado(100g), stoned and sliced
- 1 handful rocketleaves
- 8-12 cherry tomatoessliced

Method
step 1
Toast the bread and spread hummus evenly over one side of each slice. On one slice of bread, lay half the avocado, rocket and tomato. Season with pepper, then cover with another slice.
step 2
Pile on the rest of the avocado, rocket and tomato, season again and top with the third slice.

Considering the ingredients are all ones that can end up tasting a bit samey and as if they're lasting forever, this sandwich was amazing. The flavours work so perfectly together and it's definitely so filling. Perfect for long work days when you need your food to last a little longer.
