Method

  • step 1

    Blend the dates and vanilla extract using a food processor or stick blender with 2 tbsp water. Add the ground almonds and spices and pulse until combined. You may need to add extra ground almonds, 1 tsp at a time, to firm them up.

  • step 2

    Fold through the flaked almonds and pecans. Empty onto a greased baking tray and press until flat and even. Chill in the fridge until set.

  • step 3

    Turn out onto a chopping board and cut into bite-sized pieces.

Can I use sultanas and raisins instead of dates.

Unfortunately we don’t think you would get the same result if you swapped the dates for sultanas or raisins as dates a have a very distinctive pulpy texture when pureed.
