Method

  • step 1

    Take a can of lychees and drain the syrup into a blender. Add 4 of the lychees, a small bunch of mint leaves (reserving a few to garnish), the vodka and lime juice.

  • step 2

    Add ice and blend until slushy. Serve in glasses garnished with a mint sprig and a lychee.

tip

A great tip for parties: freeze the ingredients in ice cube trays (lychee and syrup in one set, lime and roughly chopped mint together in another), and blend vodka with the cubes when ready to serve. Add rum for mojito! I also like to create some of the lime rind with the juice for extra lime…
