  • 400g special mixed frozen vegetables

  • 2 tbsp korma curry paste
  • a generous handful of roasted salted cashew

Method

  • step 1

    Boil the kettle. Get out a large microwaveable bowl and pile in the rice, veg and raisins.

  • step 2

    Pour 600ml/1 pint boiling water over the rice mixture and crumble in the stock cube, then stir in the curry paste. Cover the bowl with cling film, leaving a small gap at the side to let out the steam. Cook on full power (850 watts) for 12 minutes – if your microwave is less powerful, add 2 minutes.

  • step 3

    Remove from the microwave and stand, still covered, for 5 minutes to complete the cooking – if you don’t let it stand the rice will be too nutty. Fluff up the rice, scatter with cashews and serve.

Love this... Super quick and easy and a way of getting my kids to eat lots of veg... Normally serve it with chicken steaks which works really well

Delicious, although I boiled the rice and veg on the hob briefly then sealed the top with pastry and a lid and finished off by baking it in the oven. Also used a home made curry paste - whole spices toasted and ground plus mashed ginger, garlic & chillies then mixed in yoghurt.

This was really quick and easy, and also tasty! Had to cook for 19 mins in the microwave though before letting it stand for 5 mins. Kids loved it so it's a winner! The raisins really made the dish.

Very quick and super easy to make but found it a bit bland and also dry ( if intending to have leftovers). It’s fine - don’t get me wrong. I have used it for lunches and added a couple of spoons of korma sauce from a jar (doesn’t work brilliantly but it’s fine). I would make again but will try fresh…
