Method

  • step 1

    Tip the cream and sugar into a pan. Bring to the boil, stir until the sugar has dissolved, then turn off the heat. Tip the melon into a food processor with the lemon juice, blitz until smooth, then pour the cream onto the melon and blitz again.

  • step 2

    Pour the mix into an ice-cream machine and churn until thick and semi-frozen, then transfer to a freezerproof container and freeze. Serve the ice cream scooped into a bowl with fresh raspberries.

A QUICK LOW-FAT DESSERT FOR 4

MELON WITH ORANGE & PIMM’S Mix 500g mixed melon chunks with the segments and juice of 1 orange, 1 tbsp Pimm’s and a handful chopped fresh mint. Spoon into glasses and chill until ready to serve.

So simple and delicious! This was the first recipe I tried in our new ice cream maker and we went from ingredients to eating ice cream in an hour! I used small a gaia melon and it worked perfectly.

And just to add that I reduced the sugar to 150g and it was the perfect amount of sweetness.

Hello thank you for your question. Different melon types will contain different quantities of water and sugar which will affect the texture of the ice cream - too much water will make it 'icy'. We have only tested the recipe with charentais melon. If you try the recipe with different melon types do…

Have just made it for the first time and oh so sweet! I think probably half the sugar would have been sweet enough!!

Made using Elmlea instead of cream in my old manual ice cream maker. Delicious flavour, will make again.

Tried it and loved it! I didn't use and ice cream machine, though, I took it out of the freezer ever 2 hours and mixed it really well with an electric mixer. Worked like a charm :))
