Method

  • step 1

    Mix the chilli, half the mint, lemon zest and juice, oil, courgettes and halloumi. Leave to marinate for 30 mins. Soak 8 wooden skewers for 20 mins.

  • step 2

    Thread the courgettes and halloumi onto the skewers. Cook on the BBQ, or under a grill, for 7-8 mins, turning halfway through and basting with the remaining marinade. Scatter over remaining mint.

Lovely ingredients very tasty however the halloumi basically disintegrates on the skewers I had to cook some separately. The next time I made this recipe I just cooked the courgettes and the halloumi separately. It really is so tasty will ma

We tried this as we are on a low carbohydrate diet at the moment. Very tasty and will be doing this again. Agree with the comments about not making halloumi chunks too small. Excellent with a simple green salad with olives.

Blocks of Halloumi often have a fault line running through the middle where the cheese will naturally split. Break the cheese along this line with your hands before you start cutting then it is less likely to crumble as you thread it onto the skewers.

This recipe simply doesn't work as described. Halloumi is simply too crumbly to stay on skewers. Half of it falls of as you prep the kebabs; half of what's left fall off on the barbecue.
