Method

  • step 1

    Heat grill to High and cook the bacon, turning halfway through, until crisp. Toast the bread and spread one slice with the mayo.

  • step 2

    Layer on the egg, tomato and bacon, then top with another slice of bread. Add the chicken or turkey, bacon, then lettuce. Finish with the final slice of bread and cut into quarters. Secure with cocktail sticks and serve with crisps, if you like.

RECIPE TIPS
MAKE IT VEGGIE - ROASTED VEGGIE CLUB

Serves 1 - Slice 1 small aubergine and 1 courgette, brush with 2 tbsp olive oil and season. Grill for 2-3 mins a side.

Use this in place of the chicken and bacon, and swap the egg for a few slices vegetarian mozzarella. Add 1 tsp pesto to the mayo for an Italian-inspired treat.

tip

Use smoked streaky, season the tomatoes 10mins beforehand, slice the chicken thinly , not thickly... and use white bloomer bread, great flavour for this and wont curl up like a 1980's British Rail sandwich like the recipe photo richly advertises!
