Method

  • step 1

    Heat oven to 160C/140C fan/gas 3 and line a 12-hole muffin tin with cases. Gently melt the butter, chocolate, sugar and 100ml hot water together in a large saucepan, stirring occasionally, then set aside to cool a little while you weigh the other ingredients.

  • step 2

    Stir the eggs and vanilla into the chocolate mixture. Put the flour into a large mixing bowl, then stir in the chocolate mixture until smooth. Spoon into cases until just over three-quarters full (you may have a little mixture leftover), then set aside for 5 mins before putting on a low shelf in the oven and baking for 20-22 mins. Leave to cool.

  • step 3

    For the icing, melt the chocolate in a heatproof bowl over a pan of barely simmering water. Once melted, turn off the heat, stir in the double cream and sift in the icing sugar. When spreadable, top each cake with some and decorate with your favourite sprinkles and sweets.

WAY too much batter I made a cake as well as 12 cupcakes but otherwise perfect

Delicious but they took far longer to cook than the recipe suggested.

Made these with my grandchildren and they were quite easy. Cooking time was 22 minutes as stated in the recipe - probably depends on your oven. We made less than half the amount of icing, but there was still plenty for them and they were quite happy with that. We also made it with milk chocolate…

An easy recipe to follow with my children (aged 6 and 9). Took much longer in the oven than the recipe suggested (still very wet in the middle after the suggestion of 20 mins and my oven usually cooks quicker than suggestions). Was therefore hard to catch them at the right moment. They are tasty…

Didn’t like this recipe. These cakes made way more than 10. They were really runny and they turned out crispy and caramelly after over 40 mins in the oven.
