A delicious salad dressing which is essentially what this recipe is for, that makes a nice change from the more oily dressings. As a salad this is lovely with fish and chicken

I use this all the time and am constantly asked for the recipe. I tend to add toasted pine nuts too.

This was SO popular with all my young grandsons who usually don't want to eat salad. They all took the recipe back to college with them so that they could make it. We had it with Grilled Salmon and an Advocado, Tomato and Lime salad.
