Method

  • step 1

    Slit the cherries, but don’t cut them in half.

  • step 2

    Put in a pan with the sugar and 150ml water, then heat, stirring gently, until the juices run and the sugar has dissolved.

  • step 3

    Remove from the heat, then spoon into a large bottle or jar.

  • step 4

    Add the vodka and mix well. Seal, then leave for 4 weeks before drinking to let the flavours steep. For ice cold vodka, keep the bottle in the freezer (it won’t freeze solid) or simply decant into a carafe, if you like.

Hi I have made this with defrosted frozen cherries with great success but was wondering if I can use the juice from them when defrosted instead of water to intensify the cherry flavour

Cherries are now in season in Cape Town so we are following this successful recipe for the second year running! Well worth the effort but this year we are leaving the pips in.

Hi, thanks for your question. Yes you can although you might find you don’t need the full amount of water depending on the size of your pan. Just make sure there’s enough to cover the bottom of the pan and come at least 1cm up the sides (more if using a small pan). We hope this helps. Best wishes,…
