  • step 1

    Cut the segments from 2 of the oranges and put in a bowl with the carrots, rocket and avocados. Whisk together the orange juice, zest and oil. Toss through the salad, and season.

I feel this needs more of a dressing than olive oil-anyone done it?

This recipe is fantastic, simple fresh and light and perfect if you want to jazz up your rocket for serving. I put this alongside the Super Healthy Salmon Burgers as a starter for a meal... empty plates all round!

We really liked the different combination of flavours in this salad. I thought the dressing had too much orange juice in so will probably put in a bit less next time.
