Method

  • step 1

    Spread the hummus between wraps. Coarsely grate carrots and scatter on top of the hummus, finishing each wrap with a small handful of rocket leaves and some seasoning. Roll up and eat.

RECIPE TIPS
CHEESE & HAM QUESADILLAS

Mix 200g grated cheddar with 140g shredded ham and 1 bunch of sliced spring onions (optional). Divide the mixture between 4 white wraps and fold each one over to make half moons. Heat a large frying pan. Cook the quesadillas for 1-2 mins each side until the cheese has melted and the outside is golden and crisp.

Vegan I think? As most wraps are vegan, hummus is, carrots and rucola are?

I added toasted sesame seeds to the grated carrot and also avocado and tomatoes. Delicious and simple!

combined this with http://www.bbcgoodfood.com/recipes/2242/red-pepper-houmous and I added some extra lime juice and sesame seeds to the carrots. Also added thinly sliced cucumber and crumbled feta a very nice vegetarian summer meal (and/or lunch)

I'm still undecided if i like Houmous, really didn't enjoy this, If i HAD to eat it i would add more veg, i just found the houmous overpowering. That might just be me though.
