Method

  • step 1

    Heat the oven to 220C/200C fan/gas 8. Toss the banana halves in an ovenproof dish with the sugar, maple syrup and rum or whisky. Sprinkle with a small pinch of salt, if you like.

  • step 2

    Bake for 15 mins, then remove from the oven. Heat the grill to high and grill the bananas for 3-5 mins, or until bubbling and caramelised. Spoon the bananas into bowls and scatter over the pecans. Serve with ice cream, and any of the caramelised syrup from the dish drizzled over the top.

If you’ve got any leftover boozy baked bananas, mash them to a rough purée and bake them into your favourite banana bread recipe for a sticky, caramelised twist.

Should you combine the sugar, rum and maple syrup before adding to the bananas? Or just scatter those on top?

Could this be done with bananas that are a bit over-ripe?? Or will they be too smooshy 😂

I do something similar to this specifically to use up my overripe bananas so I don’t see why not. Sounds like a lovely variation on what I do.

Bloomin delicious, easy to make but watch them when they go under the grill - very easy to catch and burn the sauce. Will definitely make again!
