Method

  • step 1

    Heat oven to 200C/180C fan/gas 6. Tip the nuts onto a large baking tray, place in the oven and roast for 10 mins, stirring now and then to ensure they don’t catch at the edges. When golden brown, remove from the oven and leave to cool completely.

  • step 2

    Tip the nuts into a food processor, add the honey and salt. Blend for 8-9 mins, until you’re left with a smooth nut butter, if you want to loosen the consistency, add a drizzle of oil and blend again.

I made with 100% cashews because I didn't have any almonds. But apart from that, I followed the recipe to the letter. This is absolutely delicious - I recommend it without hesitation!

question

the butter was coming togehter nicely but then i added extra honey and it clumped together is there anyway to save it? :-(

Thanks for your question. We'd recommend putting it back in the food processor, pulsing the mixture, with the addition of a drizzle more oil.
