Method

  • step 1

    Oil a 1-litre loaf tin and line with baking parchment – you’ll need to make sure this will fit in the air-fryer basket. If it doesn’t, use a muffin tin or shape that will work with your machine.

  • step 2

    Heat the air-fryer to 160C. Combine the oil, sugar, flour, baking powder and eggs in a bowl. Mash the bananas, then mix into the batter. Mix in half the pecans and all of the chocolate chips. Pour into the tin and top with the remaining pecans.

  • step 3

    Bake for 45 mins-1 hr until a skewer inserted in the middle comes out clean. Check after 20 mins in case it’s beginning to brown too much. If so, turn the heat down to 140C, or cover with foil to prevent burning. Leave to cool on a wire rack before serving. Will keep in an airtight container for up to three days.

Followed the instructions to the letter - all soggy in the middle whilst the outside is burning. Now finishing off in the oven - should have stuck with the oven method - air fryer instructions did not work for me.

Yes, you can - just add 2.5 tsp baking powder on top of the recipe.

Made these in individual silicone muffin cases and they turned out lovely and fluffy. 160c for 20 mins in my tiny air fryer. Had to do the in batches and they were a little 'windswept', but tasted very nice.

Delicious! Needed a bit longer than the stated 1 hour to cook. Used a skewer to check. It’s so easy to make, I’ll be make this one again.

For fellow Europeans:1.5-2 tablespoons of sugar is enough. Also, I recommend replacing 150 ml of oil with 90-ish grams of soft/melted butter.

Maybe it changes the cooking time, I don't check, I just bake until it's done. Also, since (as mentioned) I also use less fat and butter instead of oil, the proportions are not the same anyway. But as far as I know, sugar is pretty forgiving when it comes to changing proportions. I guess I should…
