  • 2lb (900g) Jersey Royals
  • 2 tbsp chopped mint leaves
  • 40 g salted butter
  • sea salt and black pepper
  • 1 tbsp truffle oil (optional)

    Method

    • step 1

      Gently wash potatoes leaving skins on
    • step 2

      Bring water to a rolling boil in suitable sized saucepan
    • step 3

      Reduce heat. Add potatoes, 1 tbsp of salt and two sprigs of mint. Cover and simmer for 20 minutes
    • step 4

      Drain potatoes and remove mint sprigs
    • step 5

      Add fresh chopped mint, butter, salt and pepper to the saucepan. Mix well and serve. For a real treat, drizzle with truffle oil

    my favourite dish, when choosing Jersey Royals always go for the smallest ones.

    You really can't change this dish, otherwise it's earthy simplicity will be lost. As a child I used to eat the cold leftover spuds with salad cream from the fridge, these days I might make a saffron alioli dip instead.…
