Method

  • step 1

    Heat the oil in a frying pan, then tip in the egg. Leave to set for 30 secs-1 min, swirling every now and again, then tip it out and finely slice. Add the bacon and mushrooms to pan, then fry until golden, about 3 mins. Add the peas, garlic and ginger, then cook for 1 min.

  • step 2

    Mix the soy sauce and sugar together. Turn up the heat, add the cooked rice to the pan, heat through, then splash in the sweet soy sauce. Stir through the egg and serve straight away, with more soy sauce if you like.

My daughter wants this as a packed lunch. I was thinking of cooking a big batch a reheat it in the mornings.

Is this dish suitable to freeze? Thank you

Hi, thanks for your question. As this contains rice it needs to be cooled and chilled (or frozen) within about an hour of cooking. It will keep in the fridge for a day and can be reheated once - make sure it's piping hot when reheated. If freezing then defrost in the fridge overnight and then reheat…

Made this today. I squeezed a lime over the rice and replaced the bacon with a diced red pepper. Served with fried prawns and sweet chilli sauce on the side

This is so quick and surprisingly tasty. I use This Isn't Bacon bits (like little lardons and incredible) to make it vegetarian, and brown rice which tasted great and had a great consistence.

I’m so pleased that I tried this. Reading the reviews, I added a finely sliced red pepper and chunks of pre cooked chicken. I didn’t add ginger. It’s a very versatile recipe. Quick and easy to do, especially if you use a pack of pre cooked rice.
