Method
step 1
Simmer the onion and the curry paste with a splash of water for 5 mins in a large saucepan, stirring from time to time. Heat the milk in a jug in the microwave.
step 2
Add the vegetables and quinoa, then stir in the milk. Bring to the boil, simmer gently for 10 mins until the quinoa is cooked. Check seasoning. Serve with warm naan bread.
RECIPE TIPS
USE RICE
If you can’t find quinoa, this soup will work just as well with rice. Rinse 300g long-grain or basmati rice and cook in the laksa until tender.

I really enjoyed this, I used a couple of chicken thighs l,fresh veg instead of frozen( 2 peppers and green beans). Only put 600mls of milk and 400mls coconut milk. And added a couple of chillies to give it a bit more of a kick. Lovely! I've made it twice now.

Might genuinely be the most tasteless muck I've ever cooked, couldn't even finish had to throw it all out. Do not use this under any circumstance

when I am really lazy, this is the best , no fuzz, only one pan, quickly done and tasty!

I initially thought it was going to be very runny but with about 15 mins simmering it was better, it just seemed an awful lot of milk! I used a Balti curry paste, broccoli, courgettes, mushrooms and cherry tomatoes and cut them quite big so they didn’t over cook. We enjoyed it.
