- 1 tbsp olive oil
- 1 onionchopped
- 350g pepperdeseeded and sliced
- 1 tbsp ground cumin
- 1-3 tsp chilli powderdepending on how hot you want your chilli to be
- 1 tbsp sweet smoked paprika
- 400g can kidney beansin chilli sauce
- 400g can mixed beansdrained
- 400g can chopped tomatoes

Method
step 1
Heat the oil in a large pan. Add the onion and peppers, and cook for 8 mins until softened. Tip in the spices and cook for 1 min.
step 2
Tip in the beans and tomatoes, bring to the boil and simmer for 15 mins or until the chilli is thickened. Season and serve with rice, if you like.

OK, and very quick to make with not too many ingredients, but I added tomato puree as suggested in another comment, which improved it a lot. I will add garlic next time I make it, as well.

This is so good, I put with guacamole and you can add in chipotle sauce on top and shredded chicken if you want but I didn't

Oh my, this recipe is SO bland. Like catyjane, I really don't understand why it has such a high rating, as there are plenty of much better options out there. As suggested in the other comments, I added stuff like garlic, extra spices, tomato puree. I even chucked in some BBQ sauce in the end to try…

Fabulous for a quick meal. I used black beans, just because they are my preference, added a good dollop of chipotle paste, a splash of pepper sauce and served with smashed avacado and lime with a dash of salt and garlic bread. Really, really good.
