Method

  • STEP 1

    Mix the ingredients for the glaze together in a small bowl.

  • STEP 2

    Season the cod with salt and pepper on both sides. Set a large frying pan over a high heat, drizzle in some olive oil and cook the cod loins for 1 min on each side. Tip the glaze over the fish. It will become molten and bubble so watch carefully as it will thicken fast and become very sticky and hot, but spoon as much of it on the cod as you can for a minute or so. Serve with a little salad of spring onions, peanuts, tomatoes and soy sauce, alongside some cooked rice.
