Method

  • step 1

    Put most of the pistachios (reserving some to garnish) in a food processor. Add the vinegar, maple syrup and oil, and blitz for a few seconds until slightly smooth. Season to taste with salt and black pepper.

  • step 2

    Combine the remaining salad ingredients in a serving bowl. Pour the pistachio dressing over the top and gently fold through. Sprinkle with the remaining pistachios and season with more salt and black pepper.

Very tasty salad refreshing and great for lunch or dinner with friends for entertaining especially in the summertime.

I made this salad for dinner and the flavours worked really well together. Next time I would double the volume of liquid dressing to combine with nuts as it was a little thicker than I’d have liked. But that could just be me personal taste.
