Method

  • step 1

    Heat the butter in a large frying pan and cook the onion and garlic for 5-10 mins until softened and golden. Transfer to a large bowl.

    Squeeze the excess water out of the spinach then add to the bowl along with the beaten egg and mix well. Add some seasoning then stir in the feta and herbs.

  • step 3

    Spray a sheet of filo with oil, then layer a second sheet on top. Cut in half lengthways to make two 15cm-wide strips. Place a quarter of the filling at the top of each strip and fold over diagonally to make a triangle, then continue to fold over down the length of the pastry. Repeat with the remaining filling and pastry to make 4 parcels. Spritz the parcels with oil then scatter with seeds. Chill until ready to air-fry.

  • step 4

    Heat the air-fryer to 180C and bake the parcels for 12-14 mins until crisp and golden.

I found this a bit bland but added sweet chilli sauce to the mix. That helped.

Would these be able to be frozen?

Yes. Freeze prior to air fryer and separate with grease proof

Personally I couldn’t work out how to fold to end up with a triangle. But they did taste delicious
