Tracey Colley is founding director of the Academy of Cheese. Tracey has worked in cheese for over 18 years; as a cheesemonger owning an award-winning delicatessen in Ludlow, Shropshire; as a top tier Account Manager for Harvey & Brockless, the UK’s biggest distributor of cheese; and in her current role running the internationally renowned Academy of Cheese – an organisation educating about and promoting the fascinating food stuff that is cheese. Tracey loves to champion artisan cheese producers and is passionate about getting young people interested in working in the industry, be it as cheesemongers, cheesemakers or cheese sommeliers.
