Aisling is an Irish journalist based in London. She was previously on staff at The Telegraph where she wrote about lifestyle, culture, food, and travel. Her work has also appeared in Vogue, The Irish Times, Evening Standard, Bustle, Grazia, Stylist and Time Out London. She studied French and History of Art at Trinity College Dublin which included a year studying at La Sorbonne Paris IV through an Erasmus scholarship. After a few years living and working in New York, she decided to pursue a master’s degree in journalism at City University of London. As someone who is deeply interested in the people behind the food, she co-produced Melting Potcast, a podcast that championed immigrant communities across the UK by sharing their stories of food.
