Blueberry & chia pancakes
Make this Pancake Day taste special with these beauties starring St. Ewe Rich Yolk eggs. Created by nutritionist Rhiannon Lambert, they’re a healthy treat you’ll want to enjoy all year round!
MAKES 10 | PREP 5 mins | COOK 20 mins | EASY
Ingredients:
2 St. Ewe Rich Yolk eggs
1 tbsp honey
3 tbsp plain ‘live’ yogurt
¾ cup almond milk or milk of choice
1 cup whole wheat flour
1 tsp baking soda
¼ tsp salt
2 tbsp chia seeds
knob of butter
¼ cup blueberries, to serve
icing sugar, to serve
For the yogurt
2 tbsp kefir yogurt
1 lemon, zested and juiced
Method:
1. In a large bowl, whisk the Rich Yolk eggs, honey, yogurt and milk together, then add the flour, baking soda, salt and chia seeds and whisk to combine.
2. Melt a knob of butter in a pan over a medium-low heat, then use a ¼ cup measuring cup to scoop the batter out.
3. Add the batter to the pan. Cook for 1-2 mins, until it starts to bubble, then use a spatula to flip the pancake over and cook for a further 1-2 mins. Once cooked on both sides, remove from the pan and set aside, then repeat the process until all the batter is gone.
4. For the yogurt, stir the kefir yogurt, lemon juice and zest together in a bowl. When ready, top the pancakes with a few blueberries, then dust with a little icing sugar and serve with the yogurt on the side. Enjoy!
