  • Rouille
  • 4 garlic cloves, crushed
  • 1 medium red chilli, deseeded and roughly chopped
  • 1 large red pepper (capsicum)
  • 1/2 tsp smoked paprika (hot or mild)
  • 180ml olive oil
  • 2 tbsp fresh white breadcrumbs
  • maldon salt and freshly ground black pepper

    Method

    • step 1

      Place the red pepper under a hot grill and cook for 5 minutes on both sides, so that it softens and the skin is slightly charred.
    • step 2

      Remove the pepper from the grill and peel the skin with a small knife. Halve the pepper remove the seeds and roughly chop the flesh.
    • step 3

      Place the garlic, chilli, pepper and smoked paprika in a food processor or blender and puree to a smooth paste.
    • step 4

      With the motor running gradually pour in the olive oil until well combined, finally blend in the breadcrumbs.
    • step 5

      Season the rouille to taste. Serve

    A rouille is made with crushed garlic and egg yolk whisked with oil, creating a mayonnaise-like emulsion. Flavourings include saffron, cayenne and salt. Not sure what this recipe is but it’s not a classic French rouille.

    tip

    This recipe splits every time no matter how carefully you make it. Surely it should have egg yolks? Or use mayonnaise to stabilise it

    Great recipe, great taste. Make the breacrumbs in the magimix 1st, put to one side then make recipe. Bit less oil a good idea.

    I'm sure this is the classic way to do it but a great cheat is approx 2 tbsp of may plus generous pinch of chipotle chillis if you have them plus half tsp of smoked paprika. Don't forget the grated gruyere which you add with the sauce onto small bits of toast and ladle over some soup. Delicious.
