Method

  • step 1

    Bring a large pan of lightly salted water to the boil, then cook the pasta according to pack instructions.

  • step 2

    Meanwhile, heat the olive oil in a frying pan, then add the courgettes. Cook for 5 mins until softened and lightly golden. Reduce the heat, then add the lemon zest. Gently cook for a further min, add the soft cheese and milk, then mix together until the cheese melts. Season to taste.

  • step 3

    Drain the pasta and return to the pan. Add the contents of the frying pan and stir well. Serve immediately.

What is meant by 'soft cheese'? Can we have examples?

Hi, thanks for your question. Soft cheese such as Philadelphia or own-brand equivalent sold in tubs - you should be able to get a garlic and herb version. We hope this helps. Best wishes, BBC Good Food Team.

I'm not sure how many servings this recipe is supposed to make but I imagine it's a lot with three courgettes and 350g of pasta. Does anybody know how many people this recipe feeds? I'm usually only cooking for one.

It actually says, as they all do, this one serves four, just divide and cook
