Method

  1. Heat oven to 200C/fan 180C/gas 6. Boil the potatoes for 10 mins, then drain well. Arrange on a baking sheet, then crush each one lightly with a potato masher. Drizzle with olive oil and sprinkle with paprika, sea salt and freshly ground black pepper. Bake for 20 mins until crispy.

    These were delicious and ridiculously easy. My teenage daughter commented that she isn't normally keen on new potatoes (unless they are cold and sitting in the fridge!) but thought these were 'fab' and she wished there were more. We all enjoyed them.

    These are lovely, have made them a couple of times now, but also added some cooked green beans and then added the olive oil and pepper etc over the whole lot before putting in the oven, yum :o)
