  • 125g butter
  • 150g caster sugar
  • 1 tsp vanilla extract
  • 1 egg, beaten
  • 3 bananas, mashed
  • 100g chocolate chips, white or milk are best
  • 190g self raising flour
  • 60ml milk

    Method

    • step 1

      Grease and line a 2lb loaf tin. Melt butter, sugar and vanilla in a saucepan over a medium heat.
    • step 2

      Remove from heat and add the mashed bananas, mix well.
    • step 3

      Add the egg, mix well.
    • step 4

      Stir in the flour and the milk. Once combined add the chocolate chips.
    • step 5

      Pour into the prepared tin, sprinkle with a tablespoon of demerara sugar to give a crunch topping if liked.
    • step 6

      Bake at 150 C fan oven (or 170 C regular, Gas mark 3) for 45 mins, until a skewer comes out clean. Leave to cool and enjoy

    I make this cake once a week! It's so quick and easy and my 13 year old loves it and he's into his healthy food. I cut the sugar down to 100 grams and its plenty sweet enough and I also use dark choc chips too. A real winner in this house!

    Forgot to say I cook it on 150 degrees but for 55 minutes. Perfect!

    Just made this cake only used two bananas left out the milk and put chocolate orange match makers in chopped small as had not choc chips and baked for an hour wow it’s gorgeous

    Love this recipe it’s a firm favourite in our house. The only tip is we cook it on a slightly higher temperature for longer!
