Simple jammy biscuits

Method

  1. Heat oven to 190C/fan 170C/gas 5. Rub the flour, sugar and butter together until the mixture resembles breadcrumbs. Alternatively, you can do this in the food processor. Add enough egg to bring the mixture together to form a stiff dough.
  2. Flour your hands and shape the dough into a tube, about 5cm in diameter. Cut into 2cm-thick slices and place on a large baking sheet. Space them out as the mixture will spread when baking.
  3. Make a small indentation in the middle of each slice with the end of a wooden spoon, and drop a tsp of jam in the centre. Bake for 10-15 mins until slightly risen and just golden. Cool on a wire rack.

    I love this recipie! It is so simple yet so tasty!! It kind of tastes like jam roly-poly! I did make a little change to the recipie last night, i moulded the dough into little heart shapes for my valentine, with a nice blob of strawberry jam in the middle!! Yummy!

    So so so easy! Very tasty too. I'm going to have to make another batch tomorrow just to make sure it wasn't beginners luck! I didn't have any caster sugar so I used light brown sugar instead. The kids and I are scoffing them as we speak!

    These biscsuits were so lovely. I made them with my little girl on the Monday and Tuesday we had to make another batch. Will definitely make again, my 7 year old loves rubbing the mixture to make breadcrumbs effect.
