Method

  • step 1

    Heat the olive oil in a frying pan. Add the nettles and cook for 1 min until wilted. Allow to cool for 1 min, then roughly chop. Add to a bowl with the crème fraÎche, mustard and half the blue cheese. Stir in seasoning and set aside.

  • step 2

    Heat the grill and lightly toast the bread on both sides. Divide the nettle and cheese mix between the toasts then pile on the remaining cheese and grill until golden and bubbling. Serve immediately.

My boyfriend thinks they are very tasty, we collected wild ones them yesterday and made nettle soup, was delicious. I look forward to cooking with them again and have no doubt these rarebits will taste great. Will let you know soon!

Ooops, just seen the spinach subsitute. Thats sounds yummier. Anyone who uses nettles, let us know if they are actually tasty?

I've never made this, but I often make my own nettle tea and nettle soup, they're really yummy. I've also used them in place of spinach in pasta x

Dont feel hungry enough to eat nettles. Surley something else could be used? Otherwise, sounds a lovely recipe
