Cut 200g/8oz manchego cheese into triangles or squares and cut the quince paste (membrillo) into small pieces. Top each slice of cheese with a piece of quince paste and serve on a flat plate.

RECIPE TIPS
A DIFFERENT CHEESE

Manchego is a firm, mild Spanish cheese. Emmi Cave-aged emmental is a good substitute.

Maggie Beer does a great quince Paste. You can buy it online or supermarkets or delis should stock one. You can slice it as it is firm and or cut into cubes etc. Yummy with cheese platters!
