Method
step 1
Spread the white bread and brown bread with some soft cheese. Season.
step 2
Layer the cucumber on half the bread and sandwich with the other half of the slices. Trim the crusts, then cut each into 4 fingers.

For the wow factor, add some fresh, finely chopped mint to the soft cheese...

Stretch it further and reduce your calories/carbs - Take a rolling pin and roll out each slice of bread till they are at least half the size.
Then make your sandwiches - much finer dining, and less cals/carbs too!

Slice the cucumber and salt it, leave it an hour and drain the water from it, that way you don't get soggy sandwiches.
