We love... quinoa

It's been around since granny started cooking but over the last few years belly of pork has had a revival.

When cured and sliced it's no more than streaky bacon but the rise of the gastropub has pushed this forgotten joint to the forefront of British cuisine - and for good reason.

Cut from the underside of the pig, pork belly is marbled with fat and consequently big on flavour. Chefs love its richness - a little goes a long way, plus it's a cheap cut, so you really get your money's worth.

In season now

Despite the recent dip in temperatures, there's no denying spring is in the air. Days are getting longer and brighter and we're moving from root veg to radishes, watercress and other seasonal ingredients full of crispiness and crunch. 

Radishes 
There are many types of radish but we most commonly eat the hot pink variety, sliced to add crunch, colour and spice to spring and summer salads. Eat them raw or marinated in vinegar.
